Sweet poli

Sweet poli is a traditional flatbread sweet made in India in the states of Tamil Nadu, Andhra Pradesh, Karnataka, Maharashtra, Gujarat and Goa. Sweet poli is my all time favorite sweet.

Ingredients:

For layer:

      • 2 cups – Maida
      • 2 tsp – Wheat flour 
      • 1 pinch – Turmeric powder
      • 1 pinch – Salt
      • Water for kneading
      • 1 1/2 tbsp – Rice flour (for dusting)
      • 2 tbsp – Sesame oil

For stuffing:

      • 1 cup – Bengal gram (Kadalai paruppu)
      • 1 cup – Jaggery (as per taste)
      • 1 no – Cardamom 
      • 1/4 cup – Ghee

Preparation method:

For stuffing:

  1. Soak bengal gram in water for about  2 to 3 hours and cook it in water till soft, but not mushy. Drain the excess water and cool it.
  2. Grind cooked bengal gram, cardamom and jaggery in a mixer to a fine powder.
  3. Heat ghee in a pan, add ground mixture fry in medium flame for few minutes or until it gets thick and allow them to cool. Now stuffing is ready for making poli.

For making poli:

  1. Take a wide bowl, mix maida, wheat flour, salt and turmeric powder. Add water slowly while mixing and kneading to make very soft dough.  Add sesame oil on top of the dough and knead it again. Cover and set it aside for 4 to 5 hour.
  2. Make lemon sized balls with the dough. Roll the dough a little and place the stuffing in the center. Join the edges and again roll it using rice flour (dust it) like a chappathi  or take a plastic sheet, apply little oil and place the dough on it. Spread it on the plastic sheet and place stuffing in the middle. Cover it with the dough and using palm slowly spread them out like chappathi.
  3. Heat oil/ghee in a tawa and cook the rolled poli by adding ghee all around. Flip over and cook on other side until light brown spots appear.

Notes:

  • The dough should be soft, but not sticky to touch.
  • Using wheat flour is optional.
