Grilled bean burrito
Burrito is one of my favourite item which is a wholesome meal that has rice, vegetables, bean, and cheese. It can be done even with leftover food which takes very less time to prepare. Here in this recipe, i tried grilled burrito which was slightly crisp on the outer side and soft inside. Also it is a best lunch box item for school going kid.
Ingredients:
Serves 3 to 4 people
- 5 to 6 nos – Tortilla ( use as needed)
- 1/4 cup – Grated cheese ( i used cheddar cheese)
- 1 tbsp – Sour cream or sour yogurt (optional)
- Pepper powder to taste
- Salt to taste
For making refried beans:
- 1 cup – Black beans or Black eyed peas (reserve the water in which you cooked bean)
- 1 no – Onion (chopped finely)
- 1 tsp – Garlic (chopped finely)
- 1/4 tsp – Turmeric powder
- 1/2 tsp – Red chilli powder
- 1/4 tsp – Garam masala powder
- 1 tbsp – Olive oil
- Salt to taste
For making salsa:
- 1/4 cup – Lettuce (chopped)
- 1/4 cup – Onion (chopped)
- 1/4 cup – Tomato (chopped)
- 1/4 cup – Green capsicum (chopped)
- 1 tsp – Lemon juice
- Salt and pepper powder to taste
For cooking brown rice:
- 1/2 cup – Brown rice
- Water to cook
- Salt to taste
Preparation method:
Making of refried beans:
- Heat oil in a pan, Add onion and chopped garlic, saute until they are slightly brown in color. Then add turmeric powder, red chilli powder, garam masala powder and saute until raw smell goes.
- Finally add cooked black bean or black eyed peas along with water in which the beans are cooked, bring it to boil and cook for 5 mins. Then try to mash the beans slightly coarse paste as shown in picture. Switch off the stove and keep it aside.
Making of grilled burrito:
- At first cook brown rice in enough water along with required salt until well cooked. Set it aside.
- Then make salsa by mixing chopped lettuce, tomato, onion, capsicum, salt, pepper as needed, finally add lemon juice and mix well, keep it aside.
- Now take a tortilla, place a scoop full of refried beans in the middle and top it with brown rice, salsa, grated cheese. Fold it as shown in the picture ( tuck in both ends) and grill for 5 minutes( or until done). Serve with sour cream or tomato ketchup if desired.
Notes:
- Original recipe calls for black beans. Since i did not have one, i used black eyed peas.
- You should cook brown rice in a perfect texture not mushy.
- You can replace this salsa with sour cream, guacamole, cilantro, hot sauce.
- I used panini making grill to grill this burrito.
- Grilling time differs with every grill, so check in between whether it is perfectly grilled or not.
