Spinach stir fry

Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A , vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2, calcium,potassium, vitamin B6, folic acid, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. I usually prepare keerai masiyal with spinach and now I prepared simple stir fry with spinach. It tasted awesome and I hope you all like it too.

Spinach stir fry

Ingredients:

      • 1 punch – Spinach / Pasalai keerai
      • 1 no – Onion (chopped finely)
      • 2 nos – Garlic (chopped)
      • 1 tbsp – Roasted pottukadalai powder / roasted dhalia powder
      • 1 pinch – Turmeric powder
      • Salt as needed

Seasonings:

      • 1 tsp – Oil
      • 1/4 tsp – Mustard seeds
      • 1/4 tsp – Split black gram
      • 1/4 tsp – Cumin seeds
      • 2 nos – Dry red chillies
      • 4 nos – Curry leaves
      • 1 pinch – Asafoetida

Spinach stir fry process

Preparation method:

  1. Wash spinach thoroughly and chop them finely, set aside.
  2. Heat oil in a pan, season with items given in the list for seasoning. Add chopped garlic and onion, saute until translucent.
  3. Now add chopped spinach along with turmeric powder and required salt, saute for 5 to 6 mins or until spinach is well cooked.
  4. Finally sprinkle roasted pottukadalai powder and mix well, switch off the stove. Spinach stir fry is ready and serve hot with rice.

Notes:

  • For pottukadalai powder, dry roast dhalia / pottukadalai until slightly golden brown color and crush it to a coarse powder. Adding roasted pottukadalai powder helps to reduce moisture in the spinach.
